The absolute best single text I've seen is Monroe W. Strickberger's
_Evolution_, Jones and Bartlett Publishers, Boston, (1990). 544 pages.
ISBN 0-86720-117-7. It's an extremely good survey of the science,
which includes summarizing many of the creation stories as background
to the controversy surrounding the topic. Then it gets into a very
readable text (with homework problems) of the science of evolution
itself, covering molecular biology, populations, genetics, and the
fossil records. -- Tom Ezell
